Joker’s Stuffin’ Muffins Recipe

Joker's Wit was begging to be put into a recipe, with its high ABV, malty body, and spice character. A Belgian-style ale that doubles down on orange peel, coriander, and peppercorn with a soft touch of lavender and cardamom adds beautiful complexity to cooking.

Thankfully, it's the season for eating. We've developed the perfect companion to your holiday meal - Joker's Stuffins! Short for "stuffing muffins" this is a twist on the classic holiday stuffing, but turned up a notch and absolutely packed with flavor.


Ingredients:

1 small onion

2 stalks celery

3 cloves garlic

12 oz Joker’s Wit

8 oz sharp cheddar

1 cup cooked bacon

1 loaf of French bread

3 tbsp butter

2 eggs

½ cup green onion

1 tbsp of rosemary

Salt and pepper to taste

 

Instructions:

  1. Dice onion, celery, and garlic and sauté in a small pot for two minutes, then add your bottle of Joker’s Wit. Let that reduce on medium heat until you have about ½ cup of liquid left (about 7 minutes).
  2. While that’s going, slice the bread into small cubes. If you have stale bread, great! If not, broil it in the oven for just a few minutes to get those edges just a little crispy.
  3. Preheat oven to 350 degrees.
  4. In a large bowl, combine your melted butter, eggs, and bread cubes. Mix with shredded cheese, chopped bacon, spices, and your reduced beer & vegetables.
  5. Butter your muffin tray generously, and add as much filling as you can to each spot, as these will not rise.
  6. Bake for 20-25 minutes.
  7. Let cool for 5-7 minutes, then serve!

We suggest serving it alongside your favorite holiday meal with a fresh pour of Joker's Wit.

 

*Keeps 5-7 days in a sealed container in the fridge. To reheat, cover and add a few drips of water. Heat in the oven at 350 degrees for about 10 minutes.
