Tank 7 is our distinctly American twist on a classic Belgian-style farmhouse ale. It's beautifully complex, with a surge of fruity aromatics and big grapefruit hoppy notes before tapering to a dry, peppery finish. You may be reading this thinking...so I'm supposed to put this in a quiche? Don't worry, all will be explained.
What's really special about Tank 7 is that peppery finish. The technique outlined below will have you reduce the beer (yes, the whole bottle!) with other aromatics that will result in a beautifully savory broth. Reducing the beer and cooking off the alcohol will leave you with a bready, peppery, and slightly fruity bunch of veggies that will punch up just the regular ol' quiche.
Crust (makes one):
1 ¼ cup flour
1 stick of butter
1 tsp salt
1 tsp sugar
6-8 tbsp of ice water with a splash of apple cider vinegar
Filling:
½ large onion
1 carrot
1 stick of celery
1 12oz bottle of Tank 7
2 tbsp butter
4 large eggs
1 cup milk
¼ cup heavy cream
¾ tsp salt, pepper
1 cup of sharp white cheddar cheese
Optional: bacon or ham (sprinkled on top)
Optional: herbs like chives, thyme, rosemary
Instructions:
Cool completely before slicing and enjoying. We'd also recommend you serve it with arugula salad and a cold Tank 7!
