However, we did reach double digits with the ages of the barrels, 12yr and 18yr, and the total time spent in the barrels, 32 months.

The base beer is made up of thirteen varieties of specialty malts and grains. This grain bill was mashed three times and added to a 36 hour continuous boil. As the liquid boils for an extended period of time, water evaporates, leaving a rich and robust caramelized wort. After this thicc boi spent almost two weeks fermenting and conditioning, the base beer was then tankered to our barrel aging facility where it rested for 8 months in freshly emptied 12yr W.L. Weller barrels. When our barrel wranglers knew it was time, they transferred this impressively boozy and whiskey forward stout into astonishing Pappy Van Winkle 18yr barrels and left to sit for over two years before the beer was ready for packaging.

When the beer was ready to leave the barrels, we transferred this woody wonder to another vessel to rest on toasted coconuts for a few days, just long enough to be introduced to the wonderful umami character which brought balance to this impressive bourbon forward barrel-aged stout.

This limited release was created to showcase the relationship between the wood and the incredibly rich base beer. At first sip, you’ll mostly experience bourbon on the nose followed by a balanced nuance of the rich and smooth base of melted milk chocolate. On the surface, this beer appears to be bold and cloying, but perfectly tucked into beer is the addition of toasted coconut which turns everything up a notch and adds a smooth umami character that helps provide balance to this incredibly complex beer.

For such a big beer, there are plenty of pleasant toasty notes that will entice you into another sip. The bourbon and coconut elements are warming and comfortably familiar. Per Quinn Reeder, our barrel program manager, this beer will be “like taking a nap by your grandparents fireplace”.
