8 oz. Chill Vibes
3 cucumbers, sliced
1 tablespoon Kosher salt
1 teaspoon sugar
1 teaspoon fresh dill sprigs
6 cloves garlic, minced
Zest of one lemon
Cover the sliced cucumbers with the salt and the sugar in a bowl. Allow to sit for 15 minutes, stirring occasionally. They should get super juicy. Add the fresh dill, the garlic, lemon zest and the Chill Vibes and stir to incorporate. Cover and place in the fridge until ready to use.
We like to serve these as a bright addition to a gyro meal either on pita or on a bed of romaine lettuce. They also do wonders to perk up a grilled salmon meal and can even be used as a homemade condiment for a burger. The cucumber, salt and sugar ratio are pretty set in stone but everything else can be adjusted to suit your personal taste. Experiment and make this recipe your own!
